I haven't really done much in the way of cakes lately, well besides the usual Independence Day cake... so when a contest came up to create a SWEET for a band I like, I thought why not.
Wasn't what I had originally planned to do, cake wise.. or design wise either, but time and creative juices stopped around the same time and I went, "that'll do Donkey, that'll do."

Breakfast was 2 eggs scrambled with a little milk, and a slice of whole wheat toast and coffee.

I didn't fall asleep until after 2.30am , thank you Christmas Season, so breakfast was actually lunch.

The rest of the day I ran around doing even more shopping and so, bottled water was my friend.

I didn't photo that. :)

On the way home, I picked up Pizza!!! (The answer is always Pizza!)

I woke up late this morning, and not feeling 100% so for lunch I had... you guessed it, the breakfast of champions again.
I'll stop having cheerios as soon as the packet is gone, and then who knows whats for breakfast. Until then...

For dinner I had a chicken/feta/garlic meatloaf sandwich.

Yeah... I was lazy today.

December 2nd.

A tasty bowl of Chocolate Cheerios and a Starbucks coffee.

This was actually lunch, as I slept in until almost noon. I blame it on the lack of sleep I got last week, my story... I'm sticking to it. Dinner however was something completely different, and by that I mean completely different. (Why say what you don't mean right)

Chicken & pineapple meatloaf, with feta and garlic, garlic mashed potatoes with a simple gravy, peas and carrots.

It was made up of Aidells chicken and pineapple meatballs, which I first cooked in the oven as per directions.

In a food pro, I added 2 onions, the cooked meatballs, 2 eggs and went to town on it. Transferred to a large work bowl and added a handful of roasted garlic cloves and a handful of Italian seasoned breadcrumbs.

Place in vessel of your choice (I used a muffin pan just because) and cook at 375F for 40 minutes.

Peas, carrots and mashed taters to how ever you like them, preferably with lots of butter and heavy cream.

December 1st...

Today was a not so great day food wise, I was pressed for time so did not photo all the food I ate, (Bowl of cereal, essential cup of coffee, a handful of M&M's, another cup of coffee...) but I did manage to capture dinner before chowing down.

Tonight's dinner was spaghetti in a tomato sauce with fresh basil.

Very simple recipe:

10 roma tomatoes, seeded and oven roasted

Kosher salt & pepper to taste

Olive oil

Garlic (I used 10 cloves, I like garlic)

Fresh basil

Parmesan cheese

Spaghetti.

Seed your roma tomatoes and drizzle with a little olive oil, oven roast them at 325F for 40 minutes.

Let them cool. While they are cooling, bring olive oil (about a 1/4 cup) to a simmer in a saucepan, add the garlic and some of the fresh basil. Simmer for a good 10 minutes, to release flavors.

Time to mash, yes mash, your tomatoes, until they are a nice consistancy, strain and set aside skins and any membranes.

In a frypan, reheat your sauce gently. Add some of the olive oil/garlic/basil to it and bring together for a nice sheen. Add a handful of grated parmesan cheese (I use a microplane for this it dissolves in the sauce) and add the pasta. (DO NOT RINSE YOUR PASTA) Toss it all together, add a little more fresh basil, some parmesan cheese and chow down.

Enjoy.

Cook the pasta as per box directions.
